Sardinia, Okinawa, Nicoya, Icarcia and Loma Linda. Wether you are wanting to eat a plant based diet just a couple of days a week or completely change your diet this class might be for you.

Simple Italian Cooking, nothing fancy just fresh ingredients to create a flavorful Italian dinner. This pasta class we will be making a healthy pasta dough with semolina flour and ground flaxseeds. We will be making fettuccine with the fresh pasta and a chickpea ragu. Also a salad with arugula, tomatoes & limoncello dressing, herb & garlic focaccia bread.

In this cooking class I will be giving you several different ideas to create your own Valentines Dinner Menu. We will be working with a Sous Vide because it will make your cooking and prep so easy. We will be working with lobster tail, beef tenderloin, creme brûlée, chocolate molten, truffle fondue and more. We will prepare small tastings and go over easy food prep and create sample menus so that you can avoid the crowds on Valentines Day and enjoy and effortless romantic dinner.

Cuban Flavors

I love Cuban flavors and cooking. We will be preparing a fabulous dinner. Starting with Corn & Shrimp Fritters, Chorizo & Shrimp Empanadas. We will be tasting with three sauces, Roasted Red Pepper, Avocado & Creamy Feta. Then a Cuban Braised Short Rib with Mango Habanero Glaze served with Coconut Lime Ginger Risotto. To finish a Flan prepared in the Sous Vide.

Southern Italian Cooking “Puglia”

Hoe made friselle with burrata, tomato, basil

Healthy Southern Italian Cooking….. you will learn a little bread making and pasta making in this class. Friselle is a bread that resembles our bagel, made with whole wheat grains, baked and then dried. Makes for great bruschetta’s with burrata and will store in your pantry for months. Orichette pasta is made with semolina and whole grains, salt and water with no egg. We will be shaping these by hand and making wild mushroom ragu. A great roasted grape salad with toasted pistachio, rosemary honey, arugula & grape must dressing.
