Spring Is In the Air

I love spring, I love the change of the weather, flowers blooming and meals lightening up a bit. In this class we will be preparing a light spring Gnudi with lemon parmesan cream and spring peas. We also will be baking a lavender cheesecake. We had one in Croatia that was so good, that I had to search for a cook book while we were there. A spring asparagus salad with goat cheese & limoncello vinaigrette. And a lavender gin & tonic.

Italian Spring Brunch

Some fun spring brunch ideas. Cannelloni primavera with fresh herb pasta, fresh ricotta, asparagus tips, spring peas, lemon béchamel & salt cured egg yolk.. Stacked shrimp & avocado salad with cara cara oranges, feta and orange basil vinaigrette. Heirloom tomato & herbed burrata tarts with balsamic. One of my favorite Italian desserts from Puglia a Pasticciotto pastry filled and baked with vanilla bean cream.

With so many friends and clients who are gluten free I am always on a quest for great gluten free breads. This bagless is pretty darn good. We will also be making a farinata flat bread prepared with chick pea flour. bread for lunches and brunches.

Plant Based – Working With Tofu

I will be completely honest, I never thought I would be a tofu fan. But when cooked correctly it is pretty tasty. We will be learning to press the tofu, season and cook in the air fryer, oven & cast iron skillet. My tofu burger with air fryer onion rings is pretty darn good.

Chicken Mole

I recently was in Mexico and had the best Chicken Mole. I really loved the flavors. In class we will be making a mole sauce from scratch. We will be preparing a chicken breast in the Sous Vide and chicken thighs in the instant pot. We will also be making white corn hemp tortilla’s, A roasted corn & avocado salad with jalapeño Caesar and for dessert a mango mint & tequila sorbet.

Southern Italian Cooking “Puglia”

Hoe made friselle with burrata, tomato, basil

Healthy Southern Italian Cooking….. you will learn a little bread making and pasta making in this class. Friselle is a bread that resembles our bagel, made with whole wheat grains, baked and then dried. Makes for great bruschetta’s with burrata and will store in your pantry for months. Orichette pasta is made with semolina and whole grains, salt and water with no egg. We will be shaping these by hand and making wild mushroom ragu. A great roasted grape salad with toasted pistachio, rosemary honey, arugula & grape must dressing.
