A spicy rub and a pomegranate glaze make for the perfect fall & holiday dish.
4 chicken breasts
1 cup chicken stock
1 tablespoon coriander
1 tablespoon cumin
1 tablespoon cayenne
1 tablespoon sumac
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon sea salt
1 tablespoon coarse ground pepper
1 cup orange juice
1/4 cup pomegranate molasses *
1/4 cup brown sugar
1/4 cup mango nectar
1 tablespoon butter
pomegranate seeds for garnish.
Place all glaze ingredients except the butter into a small sauce pan, bring to a boil stirring occasionally. When the glaze becomes thick enough to coat the back of a spoon, whisk in the butter.
Chicken: place a medium saute pan stove top and with medium high heat warm your pan. Once the pan is hot drizzle some olive oil, when oil is hot add seasoned chicken breasts. Cook for 3 – 4 minutes until nice and brown and flip. Once both sides are brown add a cup of chicken stock cover the sauce pan with a lid and simmer 10 minutes or until chicken is cooked through.
Serve Chicken breast with a drizzle of the pomegranate glaze and fresh pomegranate seeds.
* pomegranate molasses can be purchased from Amazon and Oil & Vinegar stores
Try roasting a whole chicken in the oven or your instapot with this spice blend then serve with the pomegranate glaze.
Try cutting the chicken breast in half to make 2 thin cutlets, season with spice blend, wrap in prosciutto and cook. Cooking time will be less since you have cut the breast in half. Drizzle with the pomegranate glaze and garnish with fried sage leaves.
