These are so great and easy for the holidays. You can use these prawn skewers to garnish a citrus salad or to top an Instant Pot risotto. After today I will have a photo of prosciutto wrapped prawns. The glaze is super easy to make. You can cook the prawns on the grill, in the air fryer or in your oven.
Prosciutto Wrapped Shrimp
1 dozen jumbo shrimp or prawns
6 pieces of prosciutto or speck cut in half
2 – 3 tablespoons olive oil
salt & pepper
1 cup apricot jam
1/3 cup white wine, whiskey, bourbon or cointreau
1 teaspoon – 1 tablespoon Sriracha (your preference of spice)
Place glaze ingredients in a small sauce pan. Over medium low heat cook until ingredients are combined well and you achieve a nice syrup consistency. Taste and adjust with salt, pepper & Sriracha.
Wrap 1 prosciutto strip around each shrimp and place 2 shrimp on each skewer, leaving a little room between each shrimp. Brush each of the skewers with some olive oil and place on the grill. Grill the shrimp until the prosciutto is crispy and the shrimp turn opaque and are cooked through, about 3 minutes per side.
* Serve with fresh greens and a drizzle of the apricot glaze.
* Great served on top of a fresh salad or on top of a risotto dish.
