An instant pot makes cooking an artichoke so easy. Just wash, cut in half and trim the artichoke leaves. Place the steaming rack in your instant pot and pour in one cup of water. Put your cleaned and prepped artichokes on the rack. Quarter a lemon, give the artichokes a squeeze of lemon juice, toss the lemon in the pot. Add 4 to 5 cloves of garlic. Sprinkle some salt and pepper. I also used Penzeys Fox Point seasoning. Place your lid on and make sure your vent is set to sealing. Manually adjust to high pressure is 7 – 10 minutes. For smaller artichokes 7 minutes and larger 10 minutes.
You can eat the artichokes right out of the instant pot, or try putting them on your BBQ grill and brush with olive oil or melted butter. I served mine with seasoned melted butter.
