Fresh arugula or mixed greens
grape tomatoes slice in half

Honey roasted almonds
1/4 cup limoncello
zest of 1/2 lemon, plus 1 tablespoon lemon juice
1 teaspoon dijon
salt & pepper
1/2 cup extra virgin olive oil
To make the vinaigrette measure the limoncello, lemon juice in a medium mixing bowl. Add the zest, dijon, salt & pepper. Whisk well. Slowly incorporate the olive oil whisking constantly yo emulsify.
On a salad plate place your arugula, sprinkle with tomatoes & almonds. With a vegetable peeler, peel nice pieces of parmesan on the salad. Drizzle with limoncello vinaigrette.
Try it with fruit: a salad with arugula or salad greens, strawberries, blueberries, honey roasted almonds, feta & limoncello vinaigrette
