Green Salad Limoncello Vinaigrette
This salad just tastes like spring. Wether you choose the savory tomato version or the sweet strawberry one.
Fresh arugula or mixed greens
grape tomatoes slice in half
fresh parmesan cheese
Honey roasted almonds
1/4 cup limoncello
zest of 1/2 lemon, plus 1 tablespoon lemon juice
1 teaspoon dijon
salt & pepper
1/2 cup extra virgin olive oil
To make the vinaigrette measure the limoncello, lemon juice in a medium mixing bowl. Add the zest, dijon, salt & pepper. Whisk well. Slowly incorporate the olive oil whisking constantly yo emulsify.
On a salad plate place your arugula, sprinkle with tomatoes & almonds. With a vegetable peeler, peel nice pieces of parmesan on the salad. Drizzle with limoncello vinaigrette.
