Fresh Cavatelli Pasta

1 cup all purpose flour

1 cup semolina flour

3/4 teaspoon sea salt

3/4 cup water (room temp)

Place flours and salt in a small bowl. Give it a quick stir to combine the flours. Add the water and with a spoon stir until the water is all mixed up with the flour. Bring the dough ball out and knead on the counter top or a cutting board. Knead for a few minutes until nice and smooth.. Cover dough with plastic wrap and let rest for 15 minutes.

Cut off a portion from the dough and shape into a long rope about 1/2 inch in diameter cut 1/2 inch pieces and using your fore finger or thumb shape on the smooth side of a cheese grater or roll off the back of a fork. Let dry on counter top or sheet pans with flour and let dry until ready to use.

If you are not using immediately store in freezer
