| Bobby hard at work! |

|
Bobby Malone – Sous Chef D.O.B - Younger then Shelly Bobby grew up in Chadron, which was a
very small town in the panhandle of Nebraska.
Bobby started out in the restaurant industry at a young age. He
has been in a kitchen most of his life due to his mother’s level of commitment and dedication in one. By the age of
fifteen, Bobby landed his first kitchen job, which was dishwashing, and prep work. He eventually worked his way to the weekend
breakfast cook, but was taken off for his inability to flip an egg without breaking the yolk. Due to a broken heart he left,
and the real journey began. He
had a hard time with the restaurant industry for the first five years, but at some point it just clicked inside of him. He
has never attended any culinary school of any sort and may never. Bobby’s culinary training was
simply tasting various food and reading books. It was Bobby's mother who instilled his creativity, determination,
will, lust and passion. He adapted to her skill of moving quickly, being organized, clean, and remembering a high volume
of recipes. Bobby’s desire to learn more is only stronger than it was yesterday, and at every chance he will continue
to enhance his knowledge and skills of culinary. His past experience has included: The Chuck Wagon, The South Forty, Chadron state College,
Applebee’s, The Cornhusker Hotel, The Green Gatue, The University of Lincoln, The Renaissance, The French Café,
and Q’s Restaurant. He attended the Univesity of Lincoln and is currently taking courses at Front Range. Favorite Food
– He has never given an answer to that question simply because it changes every week. Favorite

Rianna
D.O.
B - Still in
highschool, so we are talking really young!
Rianna is a Colorado native currently attending Wheatridge High School
where she has received college credit for competing in two years of Pro Start competitions with a team. During this competition,
competitors have 1 hour to make a meal including appetizer, entree, and dessert with only 2 bunsen burners and no running
water or electricity. Her mentor during the competitions was Bruno Bruesch of XJet Chef; he is a private chef and caters for
private jets also. Rianna works for him in Cherry Creek on occasion, catering private parties and charity events. She has
been working at Bella Bistro since July. Rianna plans to attend CMC for culinary arts in Keystone.
It is a 3 year apprenticeship program that will begin in July. She is super excited about it, so keep your fingers crossed
for her! Her ultimate goal is to own a restaurant. Favorite book - To Kill a Mockingbird by Harper Lee Favorite Movies - Ratatouille, Little Shop of Horrors, Thelma and Louise

Shelly Steinhaus - Owner, Executive Chef
D.O.B. – A woman never reveals her age. Although opening the restaurant can put a rapid
speed on the aging process, Bobby, Carrston & Rianna do their best at keeping her young.
City of Birth – Hollywood California
Colorado Resident – about 9 years
Culinary Background:
School – Culinary School of the Rockies, Graduate 2004
Restaurant/Chef Training: Chef Adam Mali, Restaurant Kody, Evergreen
(currently Adam is the executive chef for Montecito in Denver)
Cooking Classes: They began in 2005 with the emphasis of teaching people to be creative, to cook healthy and follow
the season with fresh ingredients.
Italy: Travel began in 1995. The cooking adventures and appreciation of the foods, wines, people, and culture of Italy began
in 2004. Next trip: Spring 2008
Winery Visits: Most current “Felsina” in Castelnuovo Berardenga (Sienna), “Palladino”
in Piedmont, “Gagliardo” in Piedmont, “Antica Masseria” in Puglia
Favorite food : changes often, currently a nice seared ribeye, with
fresh trufled pasta, cognac mushroom sauce, garnished with arugula & truffle oil
Favorite wine to drink: I love Prosecco on Sunday’s. For reds
I have become a fan of Super Tuscans like the Granchia and Monnaclaudia. And for a white I am a little partial to the Palladino
Gavi.
Success: When I see the
look on customers' faces of complete delight when tasting a food they enjoy. The best was a young boy who went cross eyed.
Thank God for the open kitchen!
